Foodie Friday: Terra Cotta Roaster Chicken

Okay, so it is a tiny bit morbid to roast a chicken during bird week, but it is so delicious, I couldn't resist



To roast in terra cotta, you have to soak the lid for 15 minutes.
I stuffed my chicken with lemon, garlic, and thyme.
I also put some under the skin.
I roasted it in the terra cotta roaster at 425 for 9o minutes.
Both the temp and time are longer in the roaster.
To go with the chicken, I soaked some quinoa for 15 minutes and
cooked it in chicken broth for 30 minutes.
I added chick peas, sultanas, and sun flower seeds 
to the quinoa and served it with slices of chicken. Yummy!
